I make these dinners all the time that I LOVE and I thought I would start posting the recipies incase I want to make it again. Or if someone else wants to try them. I make this dish a lot when I am by myself. It is a great way to make an easy and delicious dinner for one. I always hear people say, well its just me so Im not going to cook. Well... you have to start.
Basically I raid the fridge and use up left overs that I have. there are 2 core ingredients we always have in the house. They both last a few meals. Eggs, and some kind of veggie meat. We love veggie chorizo so I always buy it up when it goes on sale and throw them in the frezzer. Eggs last a while so I buy them 2 at a time. So I cook those up along with the random veggies from my fridge. Sometimes its peppers and onions. Sometimes broccoli and corn. Its a great way to use up left over veggies in your fridge. Then I come up with an interesting flavor twist. Its kind of light mongolian barbeque styley, but you end up with something that looks a bit like veggie chili. But with left overs. Its delicious. Then I serve it up with another staple item we always have in the house. Some kind of bread. Sometimes I eat the chili with chips, sometimes with a tortilla, sometimes on a sandwich. So it is cheap, easy, healthy, and delicious.
Another kind of spicey mustard chili:
2 eggs
1/2 cup of choice of meat/veggie meat
1/4 of an orange pepper
1/4 of a red pepper diced
1/4 of an onion diced
onion powder
pepper
garlic salt
spicey mustard
2 servings of carb of choice. Chips, tortilla, bread, ect.
I cook the eggs and chorizo together for about 2 minutes. Use 1 Tbsp of EVOO.
then I dice the peppers and onions while they are cooking. Add peppers and onions. I add about a tsp of onion powder and 1/2 a tsp of pepper and salt or garlic salt. I cook everything together for about 3 minutes, sirring often. Then I add about a tbsp of spicey mustard. I stir everything once more. Take it off the heat and throw it on your plate. Today I dumped a pile of bottom of the bag tortilla chips and mixed them it. It was delicious
