Healthy and happy chicken bbq sammich. Made this tonight and it was too good not to share. So simple to throw in crock pot in the am before work.
1 1/2 lbs chicken breast (buy the good stuff, its worth it)
12 oz honey bbq sauce (again, this is the base of the meal, so buy something of quality)
1 cup wasabi dijon dressing (salad dressing isle)
1 tbsp wasabi powder
1 tsp garlic salt
1 tsp pepper
1/2 tsp coarse salt
Put uncooked chicken breast into crockpot. Mix together other ingredients in a bowl and dump over chicken. Spoon sauce over to cover chicken. Cook on high 4 hours, or low 6-8 (or overnight/while at work, you know). Shred chicken to desired thickness with 2 forks (I just did this IN the pot), should be very easy to shred. Stir. Cook for another 30-45 min (while you get everything else together works fine). Serve on desired bread!
This is good enough to eat just bread and meat. Yumm.... However, I ate mine on a non toasted whole wheat hoagie with tons of raw white onion, swiss cheese, and yellow mustard. Your choice!
To refrain from eating two. Serve with big raw veggie salad.
